The name changes depending on the size of the fish: shinko or tsunamishi for fish smaller than 10 cm, kohada for young fish as large as 15 cm, and konoshiro for adult fish in Japan.

It is said that during the Edo period in Japan, samurai did not want to eat konoshiro because they disliked the meaning of “eating this castle (konoshiro)”.

It is popular as sushi rice. Its tender flesh is not suitable for sashimi or grilled with salt, but it is very tasty when it is cut into three pieces and marinated in vinegar.
