It is a white fish with a unique appearance but an elegant taste. It has long been treated as a luxury fish because of its taste, and is used mainly in ryotei (Japanese-style restaurants).

When served as sashimi, it looks beautiful and there is just the right amount of fat. It is also delicious when cooked in hot pot, as delicious broth is extracted from the skin and bones.
