Founded in 1974, Hidecho Aquaculture Farm is a long-established producer that leverages the pristine open-ocean environment off the coast of Ehime Prefecture. The farm raises a diverse range of species, including red sea bream, yellowtail (hamachi), flounder, sea bass, mackerel, horse mackerel, and striped jack.
Commitment to Cultivation Environment
At Hidecho Aquaculture Farm, fish are raised in open-ocean locations with strong tidal flow, creating a healthy, low-stress growing environment.
All farming facilities are robustly engineered to withstand the harsh offshore conditions, and daily feeding and management are conducted using large-scale feed vessels.
Particular attention is given to feed quality. Fish are fed a high-specification EP (extruded pellet) diet formulated for high fat content (25–30%), blended with fresh fish. By providing generous yet carefully controlled feeding that does not stress the fish, Hidecho produces premium-quality fish with rich fat distribution and excellent flesh texture.
For the U.S. market, the farm is also able to supply yellowtail grown to over 6 kg, allowing for fillets of 2 kg or more per side.

Quality Management and Freezing Technology
Prior to shipment, all fish undergo meticulous ikejime and blood removal procedures. Body temperature is rapidly reduced, followed by a proprietary discoloration-suppression process that stabilizes freshness while preserving the natural beauty of the flesh.
After resting overnight to assess flesh condition, the fish are filleted and moved into the freezing process once quality has fully stabilized.
Freezing is performed using a contact freezing system that combines air-blast freezing with heat-exchange plates. This method lowers the core temperature in approximately 45 minutes, significantly reducing drip loss and ensuring superior frozen quality.
Packaging and Sanitation Measures
Packaging utilizes thick, low-oxygen-permeability film to maintain vacuum integrity over extended storage periods. Moisture-absorbing paper is incorporated into the wrapping to capture drip and prevent pinholes.
The risk of anisakis is extremely low, and the freezing process ensures full compliance with export hygiene standards, providing customers with a consistently safe and sanitary product.
